Someone at my uni wrote a paper about it, i just happened to walk by when he was presenting the poster. Since i like the science behind cooking i just had to stop and listen.

Stuff i learned: Europeans and Americans like a different look and feel to their fries.

America: yellow fries with white interior, like a really crunchy outer layer. Most used potato variety for fries is the Russet. There is no real preference for fine or larger fries but on average they are finer then European fries.

Europe: golden fries with yellow interior, slightly browned tips. The inside is a lot softer. Most used potato variety for fries is the Bintje. Fat content is a little higher then american fries but they also contain less starch and more moisture inside. This results in about the same caloric density. When looking at the dry weight american fries are heavier.

Deep fried or baked thick cuts of potato are called hot chips or just chips. We also beer batter them sometimes and call them beer battered chips.

I bought myself some fries from mcdonalds and they were fucking disappointing, couldn't even finish it. Even fries from a non fast food restaurant tastes like ass. Just salty as fuck and dry and greasy.

They are an objectively bad food. Would not recommend.

Fries are okay. I have yet to find a way of eating them that will not make me feel depressed as fuck afterward. Very versatile, though, the truth must be out there.
