you need a panini press op. a george forman grill works pretty well too. problem is they always have round, downward sloping tops so it is hard to keep a weight sitting on them.

If you don't have a panini press you can just use a skillet and put another pan or anything else that is heavy on top and then flip the sandwich to cook both sides.
