It's similar to kefir, but my family makes this drink where you put a few generous tablespoons of plain yoghurt in a cup with water and stir. Amazing in summer. Wish I knew what it was called.

Kvas is tasty, definitely worth a try. I was in Sevastopol in the summer and had a carbonated honey kvas... gonna try and make something similar soon, but have no experience with making this kind of thing.

ebay, cheapest local one I could find. Amazon may be better but you're ending up with essentially the same thing either way.

Tastes like polish buttermilk, or slightly sour or slightly carbonated greek yoghurt, depending how you make it. You can also flavour it and sweeten it any way you like, I like using banana and almonds and I like it smooth rather than carbonated.

Water kefir is slightly different and tastes more like carbonated water with a hint of diluted beer.

Using different temperature and sugars you can make it as consistent as you like.

Shred cabbage, and layer in a crock with salt in each layer. Pound the cabbage to release juices. Cover the crock to submerge cabbage. There should be enough water in the cabbage to cover all of the cabbage.

dump it in a ceramic jar with some salt and lots of hot chiles. Put boiled stones on top. Seal jar. Leave it for 2 months on the counter, making sure it's nearly airtight.
