I need to cube chicken but prefer to do so when it's very much still frozen but a knife still slides through it pretty easily.
How long should it be in the fridge for before I start?
Impossible to predict without knowing the temp of the chicken and the temp of your fridge.

It should just bend like taffy. If you just took it out of the freezer, and your freezer is at 0F it's going to take hours to thaw to "stiff" temperature.
I usually go the other way around. I take it from the fridge and put in in the freezer. After about 90 minutes it's nice a firm enough to cut thin.
