I've never had it.

But I've wanted to try it ever since seeing it on Doug.

If I ever see it on a restaurant menu, I'll order it. But no restaurants serve it. Guess I gotta make it myself.

I always tried to order it when I saw it on a menu growing up, but for some reason my mom would never let me. She also fed me liverwurst and mayo sandwiches since I was 4, so I'm still confused to this day about what the problem was.

I'm positive being given shitty liverwurst sandwiches from a young age is why liver is my favorite offal. I'd agree it's not the same - despite being pretty much the same - but it's all about enjoying the flavor of an ingredient; after you've found something you enjoy you can try it in other things with more of an open mind. That's the problem with picky eaters: they'll eat a shitty tomato and decide they're never going to put a tomato in their mouth's ever again.

I also wasn't a very picky eater as a kid, and loved onions.

Replace onion with garlic and we have a deal. Best things is short of overcooking it, which is how some people like it because they can't stand blood, it's so simple you can't really fuck it up.

Liver tastes of liver. It has a fairly unique taste, very iron-ish.

Texture depends on how it was cooked. Undercooked it is rubbery. Overcooked it becomes grainy and leathery. Just perfectly done (medium rare to medium) it is soft and tender.

It tastes like rich, bloody, super tender, slightly spongy meat. Its got a bit of an off flavor if you eat beef liver, but calf liver is milder. You can soften the flavor of beef liver by soaking it in milk for a little while before cooking; say an couple of hours.

Yeah, but that's exactly like soaking shark meat in milk - you COULD do it to remove some of the acidic taste, but why the fuck are you even eating shark meat at that point then? You need to taste the flavor of the main ingredient you're using and not drench it in something else or eliminate its native flavor.

You can basically eat liver however you want, from just flashing it on both sides for 10 seconds so it gets seared to a point it has just a thin stripe of red in the middle. It really depends on how thick your slices are, though.

Because other people in the world have tastes that differ from yours. If you want people to get into trying and tasting this ingredient you seem to care for greatly, then allowing them to start with something milder would be a good place to start.
