I use egg replacer all the time. It's safe to eat.
Ingredients: Potato Starch,Tapioca Flour, Leavening (Calcium Lactate, Calcium Carbonate, Cream of Tartar), Cellulose Gum, Modified Cellulose.
Looking at the ingredients, it should hold up if you add a bit of water until you have a batter. Cook it like pancakes. Probably will be disgusting, but if you have any condiments you should be able to choke it down.
