I'm not talking any place special. Generic Chinese food where they all order from the same manufacturer.

Sweet or not sweet?

When I was a kid, crab Rangoon were these awesome garlicky savory bundles of awesome that were an aquired taste, and liking them was a sign that you were growing up, like coffee or dark beers.

Now, a handful of decades later, crab Rangoon are a sickeningly sweet side that you get for the kids because they may as well be a desert item.

I'm literally down to one Chinese place in the St.Louis area that I know of where they make crab rangoon the old way, and it's in fucking Ferguson, so I can't be assed to get them except for the occasional midday run.

Did this happen nationwide? Where the hell did sweet crab rangoon come from? And WHY?!?!??!!!

We cannot get Orange chicken at all in the UK. Pisses me off. Mall Orange Chicken or bourbon chicken are a guilty pleasure of mine in the US.

A good chicken satay can be godly if they do it properly and put it in lots of sauce. Very few places do it properly though, half the time you get kebabs, the other time you get shitty watery sauce filled with beansports (I have really shit chinese restaurants around here).

Outside of that, if you've never had crispy aromatic duck with pancakes, you're missing out.

"White People Spicy" I had this regular place I used to go to and always asked for spicy. Well after a few times going there I asked if they had anything spicier I could add to it. He ended up giving me some awesome chili oil on the side every time I went back.

Same thing happened to me at another Chinese place. The cook started giving me pic related everytime I call in.

I like the entree with the relatively low amount of breading and extremely viscous and thick sauce. The meat is usually heavily marinated already so the extra stuff just make the flavor too strong and salty.

That's why I like to order stuff kungpao, house special, teriakie, bbq chicken/pork over stuff like orange/lemon/sweet and sour chicken.

I like the small pork ribs once a while too.

I always order fried squid or calamarie though if they are avaliable though

I've found crab rangoon can be more hit and miss then expected. It's usually edible but great crab rangoon is rare. Quantity of filling, quality of filling, and shaping can vary more then expected.
Not OPs question but I've found Sesame Chicken a very safe bet for unknown Chinese places. Not sure I'd call it a hidden gem though.
