Other than that most restaurants do it, it acts as a glue for the chicken, especially when flipping the sandwich.

Added Caesar to the salad, and here we are! The only fats in the meal are the cheese and dressing, the only sugar is in the veggies and bbq sauce. I'd guess that this meal in total probably costs less than $2, and I make it almost every day.

Places like unos as well, cheap sit down restaurants. Friendly's especially. I've heard the whole rant about "chicken and cheese don't go together" and it makes sense but I'm not using top quality materials and it still makes a difference to me.

I get that it's become a thing at cheap restaurants because Americans love chicken and seem to like cheese on everything. And it probably started a few generations ago when Italian immigrants substituted chicken for eggplant in the parm dishes, because eggplant was a stretch for many Americans at the time. Then in the 80's West Coast pizza places started adding BBQ sauce to the equation.
So I understand how it came about, but I don't see how it works. Cheese doesn't really go with BBQ sauce, and I don't see why a BBQ chicken sandwich needs something to "glue it together". Cheese is generally not on the menu at BBQ joints or chicken joints. You only see it at these hybrid "sit down" places where it seems like they're just making shit up anyways.
