recipe:
onions, dried, 1/8cup
about 8 cloves garlic
cumin/coriander about 2:1
habanero tabasco healthy splash
plenty of salt and black pepper
thyme
breadcrumbs enough to bind
fried then baked in a pan
things I learned: chicken thighs are stupidly easy to debone, I did a whole pack/5lbs in 10-15 minutes
you can dry bread in a microwave in a pinxh for breadcrumbs but you need to watch it like a hawk.

Go for it, the only judgement call to make is how much fat to put in the mix, I would say I trimmed off about 65% of the fat off the thighs and they were maybe a touch dry? IDK. good luck, post a picture
