Come to NYC sometime and hit one of the Chinatowns, they have the bingocard method which is depending on what it is and who you're ordering from stamp a bingo card looking thing for your table and banging you pay based on that afterwards. It's very good, and very inexpensive.

Dim sum would probably dry out too fast unless you can set up some sort of steaming river. Some places have staff walking around with trolleys, but they've got built in steamers.
