I like Central/Eastern European style pancakes. Not too thick and not too thin. Even kot is pleased.

They're called hotteok! You can just google since its pretty basic, traditional filling is pretty much cinnamon sugar
But red bean paste works well as well. Or just a generic filling you like, savoury works as well
