Most underrated sauces/toppings?
My vote goes for oyster sauce. Excellent on burgers, plain white rice, and anywhere your pleb ass would use soy sauce instead. Too strong for dipping, but a thin layer on almost everything savory will blackjack you in a dark Detroit alleyway and smuggle you across interstate lines until you hit Flavortown USA

Also an essential ingredient for recreating Chinese take out.

Not at all, and it doesn't taste at all like oyster unless you take a big spoonful and fight through the salt and sweet/savory flavors.

Best way to describe it is a less sweet teriyaki with a darker, more intense body.

No discernible difference in flavor between the ones with real oyster and the ones with simulated flavoring that I can taste, but Chinamen and >"""""foodies""""" might dispute me

Oyster sauce has loads of MSG in it, which, to me, is a beautiful thing.
