Getting ready to make beef stew but discovered I'm out of beef stock. My options are either chicken stock or water. What does /ck/ suggest?

Well, first off, does the beef you're using have any bones in it? Because if it does, you can use the bones to make a quick beef stock.
If not, use chicken stock. Water will leave it too flavorless.

how do you guise make your beef stew?
i usually start with a roux, bacon fat if i have it but butter otherwise, then add shit-tier boxed stock (usually veg. cuz that's what we buy).
brown the beef, boil potatoes / celery / carrots, add beef jus to roux, and then combine with boiled vegetables.

I'm of the opinion that you never buy beef stock ever. If you're not going to make it yourself, get better than bouillion reduced sodium beef paste and add more than it says you should until it tastes good.
Takes up less fridge space, and you can buy multiple and put them in your pantry.
