A lot of your baked goods are a little blonde for my taste, but they look like they have nice crumb.
For the pretzels, getting a consistent diameter on the initial roll is critical. You should also have enough gluten that you're able to stretch it to get the full twist in the middle. Even if you don't have lye, you can create the alkaline water bath with baking soda, though it's not nearly as good.

More baking soda. I add like half a cup of it to about 4 cups of water. Don't all bread type foods have the capability of helping to cause diabetes also do to the constant spikes in your blood sugar from it? I don't really know, just wondering.
All of your bread looks underfermented, pale, improperly shaped and it looks like you add too much flour to your doughs. I'm not trying to be mean, but step up your game.

Bake your baking soda.
Serious. This is the key.
Spread a box of baking soda out on a cookie sheet, bake @ 325 fer 1 hour. This changes the chemical composition, and increases the alkalinity.
Use 1/2 cup to 2 cups water. Warm tap water, doesn't need to be boiling. Let em soak for 2 min a side.
