I want to pickle mustard greens. Most of the ones that I have found have fish sauce in them. I like fish but I prefer pickled mustard greens without that fish taste.

"Fast pickled" some kind of super organic cucumber I bought from a farm. They were very bitter raw, so I sliced them and put them in a brine with some dill. Ended up too salty though.
Best pickle over all is probably kimchi or saurkraut. Nothing beats that natural fermentation acidity.
I pickle home grown peppers just so they don't go to waste. I want to try pickled eggs but I'm scared
