So I want to make hollandaise sauce but I don't have a glass bowl to use for my double boiler.

I've read and seen you can use a stainless steel bowl as well. Sound good?

I do it all the time. Be aware that it heats up & cools down faster than a glass bowl, and doesn't hold any heat really. You can also control the heat by taking it off the steam for a few seconds.

Cool, sounds good to me. First time making this sauce and wasn't gonna go buy a new bowl just to fuck it up the first couple times.

I actually made a hollandaise in the microwave earlier just for giggles and it tasted pretty good to be honest.

I never have hollandaise either to be honest, but my Mom really would like me to come over and make it for Eggs Benedict for her this Sat morning so I'd like to try a few times.

Moving on and off heat is no problem, I have a gas range and a pot big enough to hold the bowl so everything will move at the same time.

Shit just DID NOT taste right, add all. It basically just tasted like sour butter.

Usually if I fuck something up I'll give it the old college try at least 5 times before throwing in the towel, but I messed up hollandaise so bad that it sent me running for powdered sauce mix with my tail between my legs.

I use the microwave and it comes out perfect every time. I hardly ever advocate the microwave, but it is useful in this case without requiring powdered packets.

3 tbsp butter, melted.
2 egg yolks
1-2 tbsp lemon juice
Dash garlic powder
Dash cayenne /red pepper

Mix. Microwave 30 sec. Whisk. Microwave at 1/2 power 30 sec. Repeat in 15-30 sec intervals, whisking each time, til consistency is reached.

My first successful hollandaise that wasn't total shit I used and followed Alton Brown's recipe. Once you get the hang of that its easier (but still not a fun thing to make at home).
