Ok then. Looking for easy veggie meals to have at work for lunch. Got an hour lunch break so don't want to spend more than about 10/15 mins preparing food. I work in a kitchen showroom so there's a fully functioning kitchen with all the toys but must be simple!

If I make myself cheesy beans on toast again I might cry.

A stir-fry would be ideal. Pack your pre-chopped veg in one container and then your sauce separately. Quick to cook, very little to clean up. And there's plenty of opportunity for variety.
