They sell bratwurst but I figured knackwurst was made cheaply or not well from an unusual part of the animal. I guess I've never seen "luxury" knackwurst but I would buy it because I'm part German-American.

Knockwurst is really just a larger form of an ordinary hot dog recipe most of the time I see it, which is to say that it is smoked and aged slightly. It could have more garlic, and be made with a blend of meat of course, whatever someone wants to do. I think my point is you can make it however you wish, no food police to stop you.
