How do you make life without all the toppings and cheese shedding water and getting it all soggy and watery? I used fresh mozzarella instead of shredded. Was that my mistake?

Since you don't have an actual pizza-appropriate oven, the answer is that you pre-bake the dough before you add sauce/toppings.

For fresh mozzarella to work right the oven has to be much hotter than your oven goes. We're talking 800-900 degrees F. Commercial ovens can't get that hot, either, which is why the standard fast food style pizza is made with low moisture mozzarella. If you want the good stuff made with fresh you have to go to a place with a wood (or sometimes coal) fired oven. These places are generally two to three times more expensive than chains or slice joints.

i'll probably get shit for recommending this, but microwave the greasy toppings (pepperoni, sausage, salami, etc) for like 20-30 seconds on some paper towels before you put them on the pizza. it reduces the grease bleed by quite a bit.
