How much ground chicken/turkey can I mix into my ground beef without really affecting the beefy flavor? I'm making meat pie and want to make it a little healthier

i'd guess about 30-50%. obviously you'll be losing flavour so you'll have to add it elsewhere

What makes you think chicken or turkey are healthier than beef?

fat content and type of fat
mix it with game meat instead

Why not just make meat pie the way you like it, have a smaller than normal serving of it, then round the meal out with a couple vegetable sides?
Also: turkey has much less flavor than beef, so what you're losing in fat you'll make up for in salt by the time you get it to taste like anything.

will alter the flavour too much
none. it takes away from the beefiness. however, ground turkey is so damn close to ground veal that I use it anyway and cook the mix down in beef stock.
