Just medium low and strain a few times. You should be able to tell when the water evaps.

it's more expensive and it barely takes any work, plus you get the butter solids leftover.

melt the butter over low heat. once it's melted, increase the heat until it's just barely sizzling. let it sit without disturbing it until the sizzling stops, depends on how much butter, how wide the pot or pan is, and so on.

once it stops sizzling, the water has evaporated. spoon the stuff floating on the top off, then strain the butter through cheesecloth or just pour the butter off and leave the solids in the pan.

put the butter solids on bread or toast maybe with a bit of jam, they're tasty. don't do this part with salted butter though because it'll be so salty but you could use it in bread dough or something.

unless you're getting it from an indian market, ghee is pricy, butter is cheap. sooo making your ghee is better.
