I've been taught from childhood that if it's pink, it's undercooked. The thought of trying one of those medium-rares gives me the exact same reluctance one would have when suggested to eat insect, natto or snails. I'm aware that a lot of people around the world eat it. But fuck, it goes against everything I know.
I haven't eaten a steak cooked past medium rare in about 20 years and I've never gotten sick.
Beef is sterile on the inside, its only the outside of the steak that grows bacteria, a quick sear will kill anything bad on the steak.
