I'd do it the same way you would make meat chili except you put your protein in toward the end. Use firm tofu with the water pressed out, brown it separately and add it 10-15 minutes before you take the chili off the heat.

well since nobody cared for my hokkaido pumpkin thread (yet) I might as well post about the curry l ike to do.
sorry if my measurements are terrible, i don't have a recipe for it, i just make it.
1 hokkadio pumpkin (roughly 800-1000g with skin+seeds)
1 cauliflower ~600g
2 cans of chickpeas, ~500g drained
1 can of coconut milk, ~400ml
1 can of crushed tomatoes. ~400ml
1 handful of cashews
2 bell peppers, chopped
1 onion, chopped
how ever many frozen peas you like.
your favourite curry powder
1.
peel & remove seeds of the pumpkin, cut in squares
chop onion and bell pepper
break off the cauliflower trees or whatever you call them
2.
heat oil in a large stew, fry pumpkin, onion, bell pepper, caluflower with your curry seasoning
3.
add the coconut milk and tomatoes and let it simmer until the cauliflower and pumpkin feels softer and almost done
4.
when stuff is almost done, add chikpeas, peanuts and frozen peas
5.
when the peas and chickpeas are getting warm enough, it's ready to serve.
serve with rice.

2 lbs of beans (peruvian)
1 can of Kidney beans
3 cups of lentils
1/2 a carrot, chopped
1 onion chopped up
4oz of diced mushrooms
4 tbs of chili pepper powder
2 tbs salt
3 tbs dried dill (make it yourself like I do)
2 tbs curry powder (this I didn't make myself, fenugreek is hard to come by)
6cups of water
2oz lemon juice
3oz white balsamic vinegar
2oz of stone ground mustard
Cook that shit up low and slow, put the onions and mushrooms in last or you wont like the texture.

Of course not, but it's a byproduct of the industry, female dairy cows are bred so that they can continue producing milk, their offspring are either kept to produce more milk as they age, or are sold into the beef industry.
If it's the latter then the circle just continues- the cow is eaten, more are needed so the mother is bred are regain, she makes more milk, more cows go into the circle.
And yeah, dairy cows are bred to produce the absolute largest yeild of milk, and that means that at least twice a day their udders become full almost literally to bursting and it's extremely uncomfortable for them, if not painful.
In fact their breasts can rupture if not milked.
If you live anywhere near a dairy farm I encourage you to check one out, they're usually willing to give people a tour if you ask.

It's really simple.
Sweat carrots onion and celery in pot (2:1:1 ratio) with olive oil
Add garlic and chili towards the end
Add stock and water
Boil until carrots are tender
Blend and adjust consistency and seasoning. Salt pepper and lemon juice.
Chop up some almonds, toast off in a dry pan. Wipe the pan and try dry toast some thinly sliced chili at low heat. Garnish the soup with the chili and almonds and some lemon zest and juice.
