A 3 Michelin star restaurant could pay a top dollar whore to lick their pans clean. Yet they still just use stainless steel (and occasionally non stick). If they are traditionalists they might use carbon steel.

well I like my cast iron pan. I like how I can use metal tools in it without damaging it, how it can heat up to very hot temps without it damaging the pan, how it doesnt have that teflon fumes to kill my bird and me, how its easy to clean.
The seasoning is really good too, it doesnt take long to build up to non stick level. I cooked eggs in my pan and got them out no problem.
And for those who complain its heavy, its not that fucking bad, you have to be a small child to not be able to cope with lifting it.

Correct. Here's a comparison I did with flour myself.

Cast iron has great heat capacity, which makes it great for searing and browning, but shitty conduction.

The pans in the photo are Lodge, All-clad tri ply, and some nonstick.

Cast iron skillets is awesome for searing meat and cooking pizza, but not much else. That being said it should still be a staple in your kitchen because they are cheap as shit. Cast iron dutch ovens are very good as well.

The most absurd pan I have is my All Clad Copper Core saute pan, which goes steel, aluminum, copper, aluminum, steel.
