DEAR READERS L.Q. Vence asked for a recipe for Chicken on a Stick, which he described as deep-fried chunks of chicken, new potatoes, onions and dill pickles. While walking across the Oklahoma State Fair grounds during the fair, I saw a big sign that said "chicken on a stick." It was owned by Camellia Dennis of Naples, Texas, and she graciously told me how she makes them.
She cuts chicken breasts into about 2-inch squares and threads them onto craft sticks. She mixes equal parts of pancake mix and flour, seasons it with salt and pepper and suggests you add your favorite spices. She has to keep hers rather mild, because she's cooking for the public.
The chicken is dipped in the dry flour mixture then in buttermilk. She does this twice before frying it in deep fat heated to 360 degrees.
She doesn't include potatoes, onions and dill pickles with the chicken, but they should cook as fast as the chicken, so thread them on also, if you like.
