Does anyone have a good recipe for Japanese style curry? I've made instant curry from those big rectangles before but they don't have the same kind of taste as the curry I've had in Japanese restaurants. They were always really spicy and had a lighter color compared to the kind I had in restaurants.
I live in a rural ass area though so I don't really have any kind of asian stores.

The secret OP, is to buy a few of those different curry blocks and figure out which one you like the best. Literally nobody makes curry from scratch.

However, most home made japanese curry have a bunch of potatoes, carrots and chunks of meat. There's "bistro"-style japanese curry which is mostly just strong sauce with topping added later. I assume you ate this type of katsu curry.
The trick behind these bistro style curry is from what I understand that you fry a fuckton of onion until caramelized, add carrots and boiling it in broth. But unlike everyday curry where all these ingredients are kept as they are you take a mixer and basically pasturize everything before adding the roux.
After the roux has melted you don't need to keep boiling the stuff, but you can well by putting it in the fridge for a night before eating it.

Good luck, because the means to produce Japanese/Korean bland style curry is a secret known only to food corporations. Salarymen and office ladies don't have the luxury of producing food from scratch. Curry comes from blocks or bags, restaurants that cater to these people with "homestyle" menus do the same. If what you have is too spicy, consider adding yogurt (by that I mean the blandest sugary Yoplait-esque brand your nation has to offer, don't add actual yogurt) or chocolate or ketchup or pear puree. Latter seems the wisest idea, to me.

As for OP, you can add all kinds of stuff, in small amounts of course, to make curry to your taste. Applesauce, soy sauce, or chunou sauce might help you find what you're looking for.

It's actually a copy of the British Naval recipe from the 19th century. When the Japs started to westernize they copied the British navy, right down to the menu. So really it's a double bastardization: A Japanese-ified version of a British-ifed dish from India.

Glad I'm not the only one who had that reaction. I went through all the trouble of ordering the "hot" version online because my grocery store only stocks the mild. There was a very mild but pleasant heat when I first opened up the pressure cooker, but after thinning it out and adding rice it's nearly undetectable.
