Oats with a date chopped up in it, and three eggs with some cherry tomatoes fried in olive oil. Also threw some oregano on the eggs and tomatoes, tasted pretty good

I don't mean to be rude, Anon, but I'm afraid you've answered your own question.
Avacodo oil is very high in mono-saturated fats, with a low amount of saturated fats per serving. Very rich, usually 130 calories per tablespoon.
Very high smoke point for a fruit oil, 450-520F depending on the purity and virginity of the oil.
I've had great success frying with it, either pan frying meats, stir fries with protein and veggies, rices, and some success baking with it in rolls, some breads. Fantastic on salads, especially hearty green salads like spinach.
It definitely carries the taste of the avacodo with it, but not as much as people say. I don't overly recommend it for baking for this reason.
It's considerable pricier than Olive/Grape seed oil, I try to use it sparingly. I purchase mine at Costco (Canada): see pic related.

Typical work lunch, kind of more food than usual since I'm here late tonight. Lemon artichoke chicken (prepped a bunch for the week) with greens, couscous salad with grapes, feta, and walnuts. Toasted baguette I baked over the weekend. Seltzer water.
