Plenty of foods are kept around until they rot/ferment and don't kill you.

Norway fish is one of my favorite recipes. I've found you do not need to be too specific when it comes to the soil. There are a few exceptions. Do not, under any circumstances, use Miracle-Gro brand potting soil. That shit has some kind of toxic chemicals in it. The fish I cured in that soil turned my skin yellow and made me shit blood for a few weeks.

I'm better now but I will never make that mistake again. Only fresh soil from now on.
