What are some great recipes that use feta?
I came across about 3 pounds of it for free and have only made Greek eggplant stew.
I have stewed up
>1-1.5 pounds of ground beef or turkey
>half cup olive oil
>two chunked eggplants
>two chunked zucchini
>two chunked squash
>4 cloves of garlic
>1 whole yellow onion
>3 cup chicken broth
>half pound of feta
>tbsp red pepper flakes
>half cup fresh chopped basil
>tbsp thyme
>2 tbsp salt
cook in a dutch oven at 375 degrees for 2 hours.

just make greek salad or use it on pizza
Spinach pie (Spanakopita)
>Bag o spinach
>Phyllo dough
>Feta
>Onion
>Garlic
>salt
>pepper
>oil
Dice onion and cook it with garlic and spinach with some olive oil. Crumble feta in and mix-- turn the heat off and let it cool down.
Take out the phyllo dough and cover a sheet pan with a few greased layers of it. Overlap is good.
Smear your cooled mixture onto your future bottom crust and top with more phyllo dough. Greasing every layer is a pain in the ass, but it's worth it. Do as many layers on top and bottom as you can stand doing.
Cook at 350 F until golden and delicious. Good hot or cold.
cube beets, toss in olive oil + salt, spread in single layer on baking sheet. roast at 375 until tender, not sure timing, perhaps 30-45 minutes. flip them once halfway.
crumble/cube feta, chop green onions, and tumble with the roasted beets.
