the canadians likely learned it from people in NY because that has been the regional way to eat cheese fries since at least 50 years earlier and it was actually a very popular food during the great depression. if you go into any diner and order cheese fries it will either come with gravy by default or the waitress will at least ask you if you want it
and there are stories that people in europe may have been eating it even before that
The only thing the canadians did was give the dish a name in its own right instead of just calling it fries with cheese and gravy

I get how they are super proud of it because its the only culinary contribution canada has made that anyone else in the world remotely cares about, but it definitively didn't originate there.

fried fish predates modern history and fries are from belgium, but the english love their fish and chips

culturally its fine to be proud of a food tradition, but to lay claim to your region when it didn't originate there is silly

Actually the chips in question are not fried and the dish as a whole is more likely Italian in origin (or influence). This is no surprise given the fact chippys were mostly set up, and run by, Italian families.

Québec curd cheese is definitely the best cheese to have with it though. The closest I've found to it in Europe is Gouda.

Nope. Sad at what seems to be the ruin of a really cool place. I've been a number of times. Great food, nice people. My wife's Albertonian for Chrissakes. It was created when a guy was at a restaurant and they were just about to close up, so they didn't have much food left, so the guy saw fries and cheese curds behind the counter and said that he wanted them.
