I had been going through about 400 oz of craft beer a week for 2 years straight. Stopped completely about a month ago after a pretty intense episode of making an ass out of myself.

Drink a good amount of water and eat a good amount of food and you won't feel hangovers. You'll still slowly gain weight if you eat enough on top of your drinking, or lose weight/muscle mass if you never eat. Eventually, even with the very slow decline and good alcohol tolerance thanks to your genes, enough alcohol per day will hurt your health, sort term memory, and relationships (unless you hide it like a coward).
It will have a negative net affect just like too much sugar or transfat or any other indulgence.
I drink daily, and realize this, despite having few hangovers. Most of them just have me feeling like s disconnected child where I don't pay as much attention as I normally do and it slightly affects my motor skills. Short term memory might take a hit. Without enlightened water/food I'll get a headache and stomach ache.
There's no magic that separates you from people who get hangovers. Just genetics and water/food consumption.

I've all but kicked the shit in terms of solo recreational use. The main snag with my gig is that taking a shot before bed helps me fall asleep much faster, and time is valuable to me. I do not want to continue the old path I was on, aka killing myself slowly with alcohol. Think about how big of a buster you would feel like in hospice leaving the material universe because you couldn't sack up and realize that addiction isn't worth it.

I was interested in trying Sake and ordered it at this noodle bar, they said it served two people and gave this weird shaped bottle with the sake inside and two shot glasses, they also asked if we wanted it hot or cold, we chose cold. It served two people but literally 3 shots each. And it was not strong, it tasted like watered down vodka, sort of if you could taste the vodka with no hard kick.
Can someone explain if they just gave us water and vodka mixed together or is this literally what sake is?

Sake is just rice sugars fermented like a wine, pretty neutral taste. It naturally ends up around 14% abv.
Vodka is fermented from grain or potatoes or something. The fermented liquid is put through a still (a still separates alcohol from the other liquid) and ends up near 100% abv, its then watered down to around 40%.

I have a very similar mindset and situation. I've improved so much in the past year, it's almost night and day.
I still have a bit of a vice though, in that sometimes after work I pick up a single pint of beer and have that as some small reward.
It's like, I can easily say no to it, and often times I do because I don't want to feel guilty for giving in and having that one beer by myself. But it's something I enjoy, it's like a small break from the world...I just don't think I should be doing it.

Booze and opiates are the worst for me. Like fucking clockwork, the 2nd and 3rd day after usage (or binge usage) are heartbeat city, especially when I consume food. Can mitigate the symptoms with bezos, but I've been holding it to one day a week with the opes, so it's not affecting me as much.

Glenfiddich and Glenlivet are the starting points usually. They're relatively cheap and you can find them anywhere. Drink them room temperature, no ice, add a tiny bit of water if you want more flavor.

Ever tried the "pink panty dropper" from home distiller forums? Basically strawberries soaked in ever clear then pour off the ever clear to another vessel and add sugar to the strawberries which will liquify, pour off, add more sugar etc. Then mix all your various alcohols and syrups to taste. That serving method is very common, giving you a small bottle and two cups, although in some more upscale places, they might give it to you in a glass. Most premium saké will be served cold but in noodle bar type places they offer it cold or hot. It's a lot weaker than something like vodka, which is why they give you a few shots' worth.
As for the taste, it was probably just not great saké, really good saké doesn't taste like vodka much if at all.
Also, the term "rice wine" is a bit inaccurate, the brewing process is actually closer to that of beer than it is to wine.
