Space issues, cost-control issues to keep the cost of a plane ticket down, it has to be something that can be easily heated with no other significant preparation (at least for economy), your taste buds don't work the same in the air and thus your ability to taste food is muted, which leaves it feeling bland except for when they shock it with certain basic flavors.

Incidentally, tomato juice tastes better in the air than on the ground and many people who dislike it on the ground enjoy it while in flight. Get a can next time you fly.

Airline food usually sucks, to some degree I agree with being able to separate the ticket from the meal but usually the stuff served is palatable but hardly anything beyond that. Usually gives me gas too which is quite uncomfortable on an airplane/airports.

These result me in preparing something to eat in advance that I can bring on board, usually a sandwich.

A study was done after Lufthansa realized they were serving almost as much tomato juice as beer without knowing why.

Basically, at ground level, tomato juice tastes rather "earthy". In the air, that element of it is more subdued, and what's left in the taste is overall more refreshing and appealing to the average person, with that earthy taste being subdued by the change to your sense of taste.

It's shit.

It's literally just a bunch of shit in foil bags that they throw in the microwave in the back room for a minute and put on a trolley.

The desserts can be quite nice though.

Asian airline tickets are also very expensive to compensate.

I took a flight to vancouver with my family for an extended family wedding. Older family members opted for flight with United during better hours with no other amenities.

The younger members opted for a flight on Cathay Pacific. We had a number of complimentary features, including alcohol and a substantially better meal and alcohol. However, we also took an utter redeye flight that was a connection from NY to Hong Kong.

We paid more or less the same for all of those plane seats. That says something.

I live in EU and I fly to Asia for work quite often, our company uses Emirates as their main carrier. From time to time I get business class tickets (mainly for flights that pass 7 hours total) and the food both in the airplane and in the lounges is excellent.

I flew BA first class last year and the food was pretty great. I had a spicy carrot soup to start, and then duck a main course. They also give you proper cutlery and plates.

Huh. The one time I flew there was turbulence like this. Hard, sudden jerks up or down out of nowhere. I didn't think nothing of it, I thought that was typical. Explains why everyone else was freaking out. It took a stewardess off her feet and when it happened you bounced out of the seat until the seatbelts caught you.
