I hadn't heard of freezing meat. It sounded weird. Well one time I had bought two packs of ground hamburger, ended up only using one, and froze the other. A week later I wanted to make more meatballs, so I thawed it in the fridge for a day and continued as normal.
They were the worst meatballs I've ever made. Every bite was off, and I did nothing different except use ground beef that was frozen before.
