Not a word, but alright I'll bite.

Something fun and exciting with lots of visual, auditory and aromatic elements going on while cooking it... so I'll say anything flambe: bananas foster, cherries jubilie (the sprinkling of cinnamon over the open flame looks like little fireworks and smells amazing), baked alaska etc etc etc.

That's just sweets though. Making fires is always exciting.

Anchovies, but they're hard to make from scratch. Takes like 10 hours from them to rise at 115F in the oven and the pickled mayonnaise almost never comes out right because 7 year old ginger root is almost impossible to obtain in a metropolitan city.
