I like vinegar based more than mayo based. There's a sandwich shop around here that makes a really good vinegar based jalapeno slaw. I always get a side of it whenever I go there for lunch.
I recently tried slaw that had been marinating in vinegar, tomato sauce, and chili powder/black pepper/cayenne/salt for a couple of days and I'll never go back to mayo slaw after that.
