Pasta is best though, simple tomato sauce with spaghetti / linguine is my favourite dish.

Honestly, if I had to choose a staple starch, it'd be rice or a starchy tuber like sweet potato/plantain/cassava. Not to say that pasta isn't good and has its uses but I hardly ever get hungry for it and could never eat it plain whereas there's something so satisfying about a bowl of plain rice with maybe a bit of soy sauce or a piece of crusty bread.
