Sour = under-extracted. Your brew method is fucky.
>>
>>7206889
It's like wine, there is no optimal taste, just drink what you like.

There are superior and inferior blends, obviously, but ultimately the characteristics of the flavour are down to personal preference and don't allow any pleb to tell you otherwise.

Desirability depends on your palate.

Technically, sour taste is caused by a fault in the brewing process.

I've been drinking coffee for so long that it no longer has any effect on me, though I never feel like I 'need' it.
I drink it purely for the smell and taste.
No sugar, no creamers, no flavorings. Just a plain, simple black cup of brewed bean water.
I love the roasty bitterness, and the smell takes me right to comfy town, day or night.

My mom used to work morning shift a long time ago, and I'd get up super early to hang out with her before work, and we'd have a cup of coffee together.
I didn't like it at first, but I wanted to feel 'grown up' I guess, and I learned to like it after putting in enough cream and sugar.
After so many years, I stopped adding cream and sugar, and now I just drink it black.

I''ve noticed how beer and coffee are the same like this, where no one really starts out liking it, but you learn to like it, and then it just becomes part of you.

adding: the water could be too cold or the grind too course or simply too old and has gone stale.
could also mean a lack of water pressure but i think the context is >>7208022
>drip
so water pressure isn't a factor.

basically extraction has three phases: sour, body, bitter.
if the brew is underextracted then you're only getting the sour part.

>>
>>7208238
>Will I regret getting this grinder?
Probably.

Blade grinders tend to give you an uneven grind, so while most of the coffee will be ground to the right size there will always be some that's been ground way too fine or too coarsely.

It works in a pinch and it's good to have one around to grind spices I guess but I'd still try and find a decent burr grinder.
>>
>>7208238

Tried it just now, with triple the does of coffee and a really slow and low simmer, with tons of foaming, but it's still really thin.

>>
>>7208335
I dont know. I was in the same boat and honestly coffee pseudoscientists are the most annoying breed on the earth, they all think their opinion is fact because "it just makes sense if you think about it".

But i went ahead and got a hario burr grinder because if i am going to be spending ~14$ on 12 oz of coffee i better be getting the most out of it and people said use a burr grinder to get the most out of your coffee.

I brew with a chemex and and the only thing i have noticed since switching to the burr grinder is that there is less large chunks of coffee sticking to the sides of the filter when the water drains down. When i was using the electric blade grinder there would often be large chunks hiding in the otherwise medium course grind and they would stick to the sides of the chemex filter + float to the top when you pour water in. Does the coffee taste better? I dont think there is a huge difference but it helps me save a little coffee by promoting "more" even extraction of everything you grind

similar but chinese knock off brand 3 cup one, when I got home with my bag of coffee grounds I quickly realised they were in fact whole beans, so now I also have a coffee grinder worth twice as much as the combined cost of the pot, milk throther, fancy pour cup, coffee and two new mugs.

Just like french presses, moka pots come in sizes. Yours is most likely single serving, so it makes just the one cup. You don't water it down unless you're into that sort of thing, it should be ready to drink when it erupts from the moka fountain.

So a friend of mine bought me an iced coffee maker for Christmas. Do you reckon I could place a glass container of some sort inside it (I can't put the water reservoir on a different container, it has to click into place to work), turn it on and use it as a regular coffeemaker? I'd have to put a glass container on the inside as the jug you're meant to use is plastic. The only issue I can think of is that the reservoir wouldn't like the heat/steam since it's meant to just place the coffee directly into an ice/milk/etc mixture, but when you clean it out you don't put any ice into it and it seems to be fine. It isn't a very large amount of water though.

What do you guys think?

What's the recommended amount of coffee grounds in a French press per oz of water? I've just been using the scoop that came with the press since I don't have a scale to measure out the grounds. I usually brew a 12 oz cup
>>
>>7210529
What tastes best?
>>
>>7210529
I do 22g coffee to 370g of water for a 12oz mug which is roughly 17:1. Assuming you're talking about the Bodum scoop, it is 7 grams, so you'd want slightly more than 3 of them.
>>

What the fuck are you doing wrong?
I have been using an aeropress for two months now and love it.
1. Set kettle to 80C
2. Grind beans while water is heating
3. Put ground beans in aeropress, inverted style
4. Pour water half way
5. Stir for ten seconds, let sit for total of 30 seconds
6. Pour rest of water, let sit for total of 1 minute 30 seconds
7. Press for 30-60 seconds
8. Clean aeropress
9. Add a splash of water to coffee cup
10. Enjoy

No, bitter means something is off in your shot, either the grind, tamp, preinfusion, pressure, temperature, etc. you can get sour espresso if something is off too.

There should only be a small amount remaining: whatever is left under the funnel (with the grinds). Not half of the water you pour in.

I use Bodum's recommended ratio and it's solid for me. I use 21 grams of coffee and about 290 grams of water; so roughly 1:14 ratio. Other people online recommend 1:16 and 1:17 ratios, but it's a bit weak to me.

A tablespoon of coffee is roughly 5 grams if you don't have a scale.
>>
>>7206575
The tube on the base of the funnel act like a straw and can't suck water up if it's not touching water.

If it's submerged in water and still not sucking the water up then it's either not hot enough or your grind is too fine and blocking the filter. When the grind gets wet, if it's too fine it will fuse into a solid clump. Does the safety release valve activate? Does the water slow to a slight trickle before stopping? Are you using a flat blade chopper/grinder?

You shouldn't be using a skerton for espresso. Bare minimum is a Lido

>>7207682
If you are grinding for FP in a Skerton then you should really get the Orphan Espresso upgrade. The burrs wobble and don't grind evenly at that coarseness.

>>7208017
I would say the Kalita Wave 155, its pretty cheap as are the filers and don't have as much of a learning curve as the V60 or Chemex

>>7208022
Extraction is based on several factors, grind size, temperature of water, and amount of time in contact with water being the main ones.

Capresso Infinity and Baratza Encore are considered bare minimum electric coffee grinders. If you don't have the money for that then look into the zassenhaus, porlex, and hario grinder.

>>7208484
Probably not grinding fine enough. It needs to be even finer than espresso. Use darker beans as they are more oily

>>7209160
No such thing exists. Your cheapest option is to look for a used or refurb gaggia. Its also important to remember that, especially with cheaper machines, your grinder is very important. Be prepared to spend at least 200 if willing to grind by hand or $400 for an entry level espresso grinder

>>7209521
By the time you do all the mods a 155 needs to actually produce real espresso you could have gotten a real espresso machine.

>>7209622
sounds like you either need to increase the grind size or your brew time but only one of those. It could also be that you aren't using enough. 15:1 is a good place to start

>>7209980
No the aren't. Many espresso blends do contain some robusta but generally 5% or less and almost never more than 10%. Also don't buy coffee in plastic or a tin. Its long past stale.

>>7210030
Yemen Mokka from Happy Mug at the moment

>>7210041
Thats and overly general statement.

>>7210517
It really depends on the exact model. Hario has a cannister grinder like that with ceramic burrs that is pretty decent.

>>7210529
15:1 is the baseline
>>
>>7210608
80c is way too cold. You want your BREW temp to be 175-205 not your prebrew temp. You also only want to add 200% water by weight for your bloom. You also make no mention of grind size which is critical for coffee recipes.
>>
>>7208351
Imagine using a flat blade grinder to chop up ice. Ignoring the fact that the friction will melt the ice, if it didn't then you'd get a bunch of different sized rocks of ice and if you put that ice in a seive and submerged it in water for a few seconds the small tiny rocks will melt instantly while the larger rocks will only melt a little bit. If it was coffee then the small pieces will be over extracted and bitter while the larger pieces will be under extracted and sour. Plus the friction of the flat blades will burn your coffee so it will all taste horrible.
Grinding means crushing, not chopping. This is why the only true grinders have burrs, not blades.

>Does the safety release valve activate?

Nope

>Does the water slow to a slight trickle before stopping?

Nah, I was actually trying to smooth out the sputter that happens at the end.

>Are you using a flat blade chopper/grinder?

Nope, Baratza Encore set to 13 (12 is recommended, but it seemed a little too fine). Maybe 13 is too fine?

Anyway, I got 6-cup moka pot to almost fill my 10oz cup to the 8oz mark. It was maybe 7oz with an entire oz left in the pot.

Even though I tried applying more heat, that extra ounce wouldn't come up the column. The coffee was still fucking good though.

>I think I was just turning off the heat too soon.
I think so too based on:
> I was actually trying to smooth out the sputter that happens at the end.
That sputter means the water level has reached the base of the 'straw' and the steam has started going up through that straw, which signifies the end of the brew.
If it's making a mess then I'm guessing you're keeping the lid up to watch it. Just keep the lid closed and listen carefully.
I don't have a lid on mine (took it off because it annoys me) but I'm usually standing by the stove ready to turn the heat off immediately. Never a mess.

>>7211566
just get a french press
you don't have to change anything else, but the brewing mechanism of the french press means
the brew gets impregnated with more of the coffee oils, leading to a richer, thicker coffee than with drip.
It also gives you lots of control over brewing parameters so you can experiment.

End the AeroPress meme. For the love of God how do people see it as easier than a French press when it makes less? I have a 12 oz French press. Right, but again that is brew temp. That is what temp you want the water while you are brewing. Heating water to 82C(you example) and then brewing is going to result in a much lower brew temp.

Don't buy a blade grinder, if you are strapped then just get a Hario Mini Mill or Skerton. Don't buy your beans from starbucks either. They are over roasted and stale. Try Happy Mug if you want good coffee that is freshly roasted but also cheap.

Its not that hard. The ecc155 uses pressurized portafilters to give the illusion of espresso but it isn't. You can mod the portafiler to make it nonpressurized and bottomless but you still have to temp surf unless you want to install a PID too. Steam wand needs to be modded as well usually with a SIlvia want to produce decent microfoam but by the time you do all that you could have had a cheap gaggia.

Also the steamwand is "ok," might take the frothing aid off though.
Plus I got it like $45 used.

Espresso is a completely different monster entirely and we both know that we were not talking about espresso at all. Nice moving the goal posts though. We were talking about brew methods like immersion and pour over and it that case, yes, it does.

Yes, I have an aeropress, I also have a moka, phin, ibrik, Kalita 185, Chemex, French Press, and an Astra Pro. Whats your point? Its a good immersion brewer for ~$20 and great for people to learn on.

Pressurized produces faux espresso and just isn't very good in general. You can't control any parameters except grind size and even that is limited. If it is working for you though that is great but not something I would ever recommend to someone wanting to get into espresso. Its just got a lot of short comings. Pressurized basket, single, small boiler, steam wand is pretty much unusable if you want a proper microfoam, small water reservoir, you have to temp. surf, etc. The portafilter mod is easy enough to do yourself and will greatly increase the quality of your shot. I would definitely recommend it. Its a pretty good machine to learn on and play around with without too much investment(although definitely not worth the price new) but people wishing to get into espresso even casually would be better off to save a little more money and get a better machine.
