Literally nothing wrong with this. I do it every time. You put wasabi on sushi. You put soy sauce on sushi. Why not just combine the two from the get go? Will the sushi chef get butthurt? Will my waiter inform the sushi chef that I'm mixing them and the two of them will snicker at me?

Pickled ginger is very briney and sour and intense. Ginger in particularly as a spice tends to cause a numbing/spice sensation that overpowers most other tastes. This is why its used to cleanse the palate. Our tastebuds become desensitized to certain tastes if stimulated for too long(such as by eating the same flavor multiple times in a row). This resets the taste profile.
Putting it on the delicate raw fish would seriously overpower its subtle and intricate flavor. And considering sushi is rediculously expensive, id assume youd want to actually taste that fish.
