I usually try for at least three types of olives (calamata, weird green [don't know eng. name], and sundried black), marinated artichoke hearts, sundried tomato, pickled onion, and fermented carrot.
I don't do this often, but it's tasty. I am being craving-triggered.

I can never get the falafel dough just right. this time they were sticky and finicky as hell but on the upside they are melt in your mouth tender and crunchy on the outside, so I guess its a win
