Paneer. Any of my fellow co/ck/s want to share their favorite ways to use this stuff? Doesn't have to be an Indian dish.
I fucking love having saag paneer with garlic naan to scoop it up. Probably my favorite thing to order at indian restaurants.

Crumble it and use it instead of feta.

It doesn't taste or feel like any of your average cheeses, and the best part is that it doesn't melt or deform when you heat it. In terms of properties it behaves more like tofu than cheese.

No it's made of caesin like any other cheese but without enzyme. Ricotta is whey. The closest equivalent is buffala mozzarella that doesn't melt. Since 99% of Indian paneer is also made from buffalo milk. Slightly more crumbly than mutz.
