Gf is Jewish and tonight I'm making her a Hanukkah feast. Upon preliminary research all I'm finding is latkes and like fried donut thighs, nothing substantial that would constitute what I would consider a meal. Can anyone lend any ideas of what to make? Meat would be great.

Traditional Hanukkah foods are deep-fried to celebrate the oil miracle as described in accounts of the Maccabees' revolt. Make some fried chicken and veg tempura and enjoy yourself a delicious, delicious meal. Rather than sufganiyot (the doughnut things you were talking about), funnel cake would be really nice. Much easier to make, too.
