I want explore more of French cuisine. I live in the States thus not all French restaurants may be very authentic thus, I am wondering what are some must try dishes.

Ratatouille is fucking delicious, and easy as hell to make. Go for it, OP.

Also, pick up one of Julia Child's books. Not 100% authentic, but they're written such that a home cook could make the recipes.

I've only really spent a good deal of time in Burgundy, but I feel like boeuf bourguignon and coq au vin are pretty standard places to begin.

Cassoulet is also pretty much one of the best things ever.

Almost all French peasant food is delicious

As for classical French, just go with the classics. My favorite dish though is pommes anna, Probably the most delicious non-fried potatoes ever..

Grab some snails out of your vineyard and boil the shit out of them with three times as much garlic as you'd think necessary.

If you don't have a vineyard you can substitute the leather sole in your shoes.

Piperade (vegetables stew made with tomatoes, pepper and onions)
Quenelle
Choucroute garnie (sauerkraut with meat and potatoes)
Bouillabaisse (fish stew)
Aligot (mashed potatoes with cheese, if you want to make some yourself I hope you have strong arms)
Duck confit (with Sarladaise potatoes if possible)
Andouillette (pork intestine sausage, you either love or hate it)
Sole Meunière (floured sole with a butter and lemon sauce)
Pan Bagnat (tuna, vegetables and egg sandwich)
Croque-Monsieur (and family)
Tartiflette (potatoes, reblochon, lardons and onions)
Galettes and crêpes
Pot-au-feu (though I suppose most country have a similar recipes considering it's the basic meat + vegetables peasant stew)
Tarte flambée (also Flammenkuche)
Gratin Dauphinois
Garbure (half soup half stew, made with ham, gabbage, beans and vegetables)
Mouclade (mussels, onion, shallot, white wine)
Poule au pot (another old peasant dish, stuffed chicken slowly cooked in a broth with vegetables)

Then you can add all the dishes I forgot, the desserts, others regional specialties (like pic-related), and so on...

Go try a " petit salé au lentilles " : lentills, carrots, oignon and pork.
You can cook it easily in a crockpot, it's a great winter dish
