While I haven't known any fat vegans, I did know some overweight vegetarians. They didn't eat balanced before, so when they went vegetarian they kept eating junk fast food, only it was cheese pizza instead of pepperoni, or bean burritos instead of beef tacos.

Check out Sarah Kramer's vegan cookbooks. The recipes are incredibly easy to prepare. I recommend La Dolce Vegan.
