First, to make a pumpkin cake, once required a baking pumpkin and a pinch of salt.

2. Remove the stem of the pumpkin and cut in half.

3. Scrape out the seeds and strings.

Sprinkle a pinch of salt on both sides then put face down on a baking tray lined with parchment paper.

Cook in a 400F oven for 40-45 minutes until very soft.

4. Transfer the pumpkin halves to a cooling rack to cool for 30 minutes to an hour.

5. Scoop the flesh of the pumpkin. Remove any overly cooked bits and make sure you don't get any skin.

6. Pulse in a food processor until smooth.

9. Set aside to cool fully.

10. Then gather the ingredients for the cake proper :

2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
½ tsp cinnamon
½ tsp cloves
½ tsp ginger
½ cup unsalted butter, room temperature
1 cup sugar
2 egg
1 cup pumpkin puree
zest of one orange
1 tsp vanilla
1 cup orange juice
1 ½ cup cranberries

11.In a bowl, combine the flour, baking soda, baking powder, spices and salt.

12. In the bowl of a mixer, combine the butter and sugar. Cream the butter until light and fluffy, scrapping down the sides a few times.

13. Add the eggs one at the time, mixing well between each.

14. Add the puree, orange zest and vanilla extract.

15. Add the orange juice and stir well to combine.

16. Stir in the flours in 3 times.

17. Remove from the mixer. Fold in the cranberries with a spatula.

18. Spoon into a muffin tin lined with paper liners (or a good non-stick muffin tin).

19. Bake in a 325F for 30 minutes. Allow to cool in the tins for 5 minutes or so then transfer to a cooling rack. Allow to cool to room temperature.

Why do people make fattening breads when very simple white + whole wheat sourdough bread tastes delicious all by itself?

why not make some of this bread, and spread some pumpkin puree on top, and eat that? much healthier.
