GR knows what he knows really well, but every time he encounters something not French/English he flips his shit.

Surely he's seen grilled radicchio or endive, and it's not that far of a leap to grilled romaine (you do at least need to quarter it though in order clean it out properly).

I get the "everything is spicy" criticism, but he flips his shit if anything has any heat to it at all, which often comes off as picky and sheltered.

Split the romaine in half, spread the puree on it & grill it
Serve it with grilled octopus or seared fish

It gets charred, and the whole piece just gets a little wilted. You don't leave it on for long, but it add different flavors and textures.

But does the flavour change? Most leafy things taste quite different cooked than raw. Or is it just like warm lettuce with different textures and a charred taste?
