I love Wensleydale. Had some for me tea tonight in tortilla wraps- black beans sauteed with red onion, cumin and a little lime juice, topped with avocado and crumbled Wensleydale cheese. It's a very fresh, milky, tangy cheese, pretty good stuff but you can probably find something with a similar flavour profile.
Nothing is ever as good as it's made out to be in fiction.
