ITT We predict food trends that will occur in the US and possibly Europe within the next 10 years

And fish sauce will NEVER catch on. Even Vietnamese rice rolls are served mostly with peanut sauce these days. Average palate just can't hack it.

I hope youre right about omellete pancakes. Much prefer the Jap Korean versions.

Okonomiyaki is yummy but wont catch on, not before stuff like yakisoba or teppanyaki.

Korean Fried Chicken will become popular but only in urban areas, not in the heartland, and def not as popular as southern fried chicken or buffalo wings

Fish sauce is way too weird for western palates. I say oyster sauce is more likely, but even still I don't see it.

What does teppanyaki mean to you, because pretty much all the Benihana places are teppenyaki?

Okonomiyaki will catch on because its so customizable. Its like American sushi except literally everything is ok. Theres won't be any people complaining about what is "real" okonomiyaki and such

This is already happening if you don't live in flyover town. Just be glad you're so irrelevant the food trucks haven't caught on.

Japanese style pubs (izakaya) will become much more common. Newer ones will feature local craft beer rather than asian pisswater as well as sake and whisky. Feature food will be ramen or udon with various deep fried sides and possibly some donburi.

agree this will be big. there are a of them in dc already, and dc sucks for food, so i imagine they're all over.

at least one place in most markets -> somewhere that serves sushi rolls the size of burritos. already one in dc and it's crazy popular

i think there's a real gap in the 'brunch' market - 'brunch' is no longer cool, in style or special, so something will have to fill that role. i think that ramen might take over. certainly something along the lines of 'ethnic breakfast item'. mexican and latin american stuff are kind of gone too.

i could see some trendy charcuterie themed food trucks doing ok. i think really good 'italian sandwich' trucks are going to pop up to counteract the insurgence of asian fusion.


also fish sauce is too abrasive for a lot of palettes

Benihana's is an event, it's time-consuming and relatively expensive. By teppanyaki I mean something like pic related. It's already big in Taiwan and Hong Kong, cheap, quick, and mildly impressive the first time you see it.
