5/10 to high heat for to much time
fry it shorter( about half the time) and put in in the oven next time.
you dont want to have a little crust on the outside but you dont want that grey stuff

Nah, the heat wasn't high enough.
You wan't an almost smoking pan to get a good, quick sear.
Nothing wrong with then moving it to the oven to finish, though.
