I always thought the exact opposite. Especially when cooking next to Jacque Pepin. Now that guy makes it look easy. Julia, on the other hand, always seemed to do things the hard way and was quite ham-handed. Just look at her manhandle the chicken in this video

Her messing up sometimes just gives her personality and makes her more lovable.
I don't remember which episode it is but she messed up flipping something in a pan. She then talked a little about how she didn't get it because she wasn't confident enough, and when she tried again she got it and then talked some more about confidence. I think that's when I absolutely fell in love with her.
