You don't need to use a whole egg. Lots of people used to add egg shell to the coffee grounds for the same reason. You can just use the shell from your breakfast eggs. It used to be pretty common.

This is a bastardized or at least misleading representation of Vietnam coffee.
in Vietnamese coffee you use eggs, but not just dump it in like that. They puff it up first, whip it till it has the texture of foam. It basically replaces foam milk/cream.

Egg coffee motherfuckers, sure it's an old fashioned preparation and you're only likely to encounter it served in a church basement during a after-the-service "fellowship" social hour, but I'm surprised that so few people here know about egg coffee. It's really good, makes extremely smooth coffee and you don't get any egg flavor.

It's a different tradition. Sources I've read called it Norwegian egg coffee, Scandinavian egg coffee, or cowboy coffee. The purpose of this method isn't the same, rather than using the egg whites to create a foam the egg causes the grounds to clump for easy removal (or to sink it to the bottom in one technique) so you can prep it without a filter. One source claims the protein in the egg whites binds to the fat soluble tannins which reduces the astringency of the coffee. I've read it is common in the Midwest but I don't have personal knowledge of this. One theory says originally fish skins were used for the protein for the same reasons but in the Midwest eggs were easier to come by.
Vietnamese coffee isn't the only tradition to use raw eggs for texture either. A recipe for a chocolate drink favored by Louis XV of France called for coffee with chocolate added along with a raw egg.
